Description
First time eating oysters at home? This is the box for you! Our Beginner’s Shucking Kit is complete with a shucking knife, shucking glove set and a bag of 36 extra small Hog Island Sweetwater oysters, our original oyster and the star of our show. Extra small oysters are the perfect size for novice shuckers and the perfect size for slurping on the half shell.

- Each oyster measures approx. 2-2.75″ in length

- 1 Branded Oyster Shucking Knife made by R. Murphy
- Stainless blade (2-1/2″ × 5/8″) with a blue 100% recycled plastic handle
- 1 pair of Oyster Shucking Gloves (one size fits most)

INSTRUCTIONS / STORAGE
- Hog Island Oyster Co. ships Monday-Thursday of each week.
- Orders cannot be shipped to P.O. Boxes.
- Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!
- Live oysters ship fresh and love to be cold, damp, and able to breathe.
- Upon arrival, remove oysters from the bag, place a colander in a bowl so shellfish can drain well, and cover with a clean, wet kitchen towel.
- Keep refrigerated between 34-40°F.
- Never submerge shellfish in fresh water or salt water.
- Bivalves may open their shells slightly to breathe – this is normal and means they’re healthy.
- Discard any oysters whose shells are broken or do not close tightly when tapped.
- Best enjoyed within 3-4 days of delivery.
To Serve
- When ready to serve, shuck oysters and place on a platter of ice to keep them cold.
- Enjoy naked, with a squeeze of lemon, a splash of hot sauce, or a touch of Hogwash Mignonette.

Hogwash Mignonette
- Keep jars refrigerated until ready to use.
- Combine ingredients of both jars, plus the juice of 1 lime (not included), in a bowl just before serving.
Miso Nori Butter
- Store butter in the refrigerator for up to 90 days or in the freezer for up to 30 days.
