Kossar’s babka – choose chocolate or cinnamon – from the oldest bialy bakery in the United States, the Lower East Side institution that has been baking from the same Grand Street address since 1936. The yeast dough is handmade, filled with either a richly spiced chocolate or cinnamon filling, rolled and twisted to expose the layers before baking; the result is the soft, spongy, swirl-packed Jewish bakery classic that the Kossar’s counter has been producing alongside its bialys and bagels for decades.
