Description

Al Benton cures his meats in a tiny smokehouse in the Smoky Mountains of Tennessee. Established in 1947 in the town of Madisonville and taken over by Al in 1973, the Benton operation is widely regarded as an American treasure producing the most delicious cured products in the nation.

There is no secret to the Benton formula for bacon: just salt, brown sugar, time, patience, and a good hickory smoke that lasts about 3 days. Bacon curing is an art Al learned growing up. His family always butchered their own hogs, always made their own sausage and bacon, and today Al will tell you that all he’s doing is what he grew up doing in his backyard so many years ago.

Patrick Martins founded Heritage Foods in 2001 to preserve endangered species of livestock from extinction.   • Each pack weighs 1 lb.

INSTRUCTIONS / STORAGE

  • Heritage Foods ships Monday-Thursday of each week.
  • Orders cannot be shipped to P.O. Boxes.
  • Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping.
  • Bacon ships frozen with ice packs, may thaw in transit.
  • Upon arrival, store bacon in the freezer for up to 6 months or in the refrigerator for up to 7 days.

To Serve

  • Remove the fully thawed bacon from packaging and pat dry.
  • Preheat oven to 325°F.
  • Place bacon strips on a foil-lined sheet tray and bake, rotating the tray every 10 minutes until you reach the desired crispiness.
  • Once the desired crispiness is reached, remove the pan from the oven, remove the bacon from the foil, and place onto a wire rack.
  • Allow the fat to drain for 2-3 minutes before serving.
