It draws on the smokehouse Tom and Marie Savidge started in their Anacortes, Washington backyard in 1957, still smoking wild salmon in small batches over a blend of hardwoods and fruitwoods. Assemble it into a grazing board and let the smoked fish anchor the plate. Perfect for a dinner-party starter, a holiday appetizer with wine, or a low-effort evening that still looks like a spread.
