These handmade Welsh cakes are the perfect cross between a scone, biscuit, and pancake-soft, light, fluffy, and golden from the griddle. Stuffed with orange and lemon citrus with tasty white chocolate chips – no need for a topping on these Welsh Cakes but, you can warm them up if you like, add a dab of butter, some honey, a drop of jam, or a square of tasty cheese!
Growing up in South Wales, Helen Coates spent early weekend mornings in the kitchen surrounded by family and the smells of allspice and cinnamon. Since opening Copper Kettle Bakery in 2013, she has given the Northeast a taste of that childhood with her famous Welsh Cakes. Today, you can get this traditional Welsh snack with dried currants, cranberries, chocolate chips, blueberry almond, butterscotch with pecans, white chocolate with citrus, apple crisp, fruit, nuts and chocolate or pineapples and coconut without hopping on a plane across the Atlantic. Smear on a dab of butter or jam and these scrumptious Welsh Cakes will warm your heart for sure!
