Description
Alpha Tolman from Jasper Hill Farm in Greensboro, Vermont: a raw-milk Alpine-style wheel – 22 pounds, aged 8 to 12 months – with the toasted nut and cured meat flavors of classic mountain cheeses like Gruyère or Appenzeller, and a firm, smooth texture that holds up to both a cheese board and a raclette pan. Brothers Andy and Mateo Kehler have been making raw-milk cheese at Jasper Hill since 2003, milking their own Ayrshire herd in Vermont’s Northeast Kingdom.

INSTRUCTIONS / STORAGE
- Jasper Hill Farm ships Wednesday of each week
- Orders cannot be shipped to P.O. Boxes
- Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!
- Boxes ships with ice packs, may thaw in transit. Cheese may arrive at room temperature.
- Keep unopened small wheels in original wrapper. Store cut wedges or open wheels in airtight container. Enjoy-by dates are marked on individual packages.
