Jasper Hill Farm’s Raclette Party: Whitney – the raw-milk raclette-style cheese from the farm’s own Ayrshire herd – plus fingerling potatoes, pickles, mustard, and cured meat. Raclette is French for “to scrape”; the tradition is to melt the cut surface and scrape it directly onto the potatoes. From the Greensboro, Vermont creamery that has been making raw-milk cheese since 2003.

This package serves 30-50 people and includes

• Whitney Cheese Wedge (4.5 lbs.) -A raw milk raclette-style cheese made from our own herd. An ideal melter with buttery, smooth flavors and a peachy washed rind that lends a gentle, aromatic funk. 2022 ACS Best in Show Winner.
• *Vermont Salumi Lonza – Sliced * (2.5 oz.) – Lonza is lean, herbed pork loin aged for several months for delicate complexity. Bright, clean, and herbaceous flavor pairs beautifully with cheese. Made by a Vermonter with Italian roots.
• Vermont Salumi Red Wine & Garlic Salami (4 oz.) – A classic combination of pork, with cracked pepper, garlic, and red Wine. This salami is balanced, flavorful, and pairs well with hard cheeses, sandwiches, pizzas, and more.
• Pitchfork Pickles – Seasonal Selection (16 oz.) – Spicy Squickles, Sweet Horseradish Turnips, or Garlic Dill Coins. Selected based on seasonal availability
• Birdy’s Smooth Whole Grain Mustard (2 oz.) – Small-batch mustard made in New England, inspired by the French dijon style.

INSTRUCTIONS / STORAGE

• Jasper Hill Farm ships Wednesday of each week
• Orders cannot be shipped to P.O. Boxes
• Orders shipped to Alaska and Hawaii via 2-day will incur an additional $20 charge or $35 for Overnight Shipping. Sorry guys!

• Boxes ships with ice packs, may thaw in transit. Cheese may arrive at room temperature.
• Keep unopened small wheels in original wrapper. Store cut wedges or open wheels in airtight container. Enjoy-by dates are marked on individual packages.
• Meats arrive vacuum-sealed and are shelf-stable. Store in the refrigerator for up to 6 months for best quality.
• Follow the storage instructions printed on packaging, and consume before the expiration date.
• Store squickles in the refrigerator for up to 90 days.
